Two recipes
Festive Sweet Potatoes

3 cups cooked, mashed sweet potatoes
1/2 cup sugar
1/4 cup milk
1/3 cup butter, melted
1 teaspoon vanilla extract
2 eggs beaten
1 cup flaked coconut
1 cup firmly packed brown sugar
1/3 cup flour
1/3 cup margarine, melted
1 cup chopped pecans
Combine first 6 ingredients, mixing well. Spoon into a lightly greased
8-inch square baking dish. Combine remaining ingredients; sprinkle
over top of sweet potatoes. Bake at 350 degrees about 25 minutes or
until golden brown.
Garlic Shrimp

This recipe was given to me by my husband's cousin, Mireille. She met her husband at a USO club in France. They now live in Norfolk, VA.
1 lb. large fresh shrimp (24-30 ct.)
1/4 cup olive oil
1/4 cup chopped fresh parsley
3 cloves of garlic, minced
1/2 tsp. of dried crushed red pepper
1/4 tsp. black pepper
1/4 cup of butter or margarine, melted
1/2 cup of toasted french bread crumbs
1/2 freshly grated Parmesan cheese
Peel and devein cooked shrimp. Arrange in 11×7 inch baking dish.
Pour olive oil over shrimp. Combine parsley, garlic, red and black
pepper. Sprinkle over shrimp. Cover and bake at 300 degrees for 15
minutes.
Turn shrimp over, drizzle with butter, sprinkle with bread crumbs and
cheese. Bake uncovered 5-10 minutes more. Serve on a bed of rice.
Have a nice loaf of french bread for dipping in sauce.
